美味い脂は一日にして成らず

記者「伊藤さんの牛舎でのこだわりについて教えてください。」  

伊藤さん「うちはいなべ市で育てている「いなべ牛」の農家なんですけど、いなべ牛は全国でうちと近隣の清水畜産さんしかやっていないんです。いなべ牛の特徴は“脂の質”なので、脂質にとことんこだわっています。やっぱり牛肉の美味しさを決めるのは脂の甘みと口溶けの良さ。だからこそ、消費者の意見も大事にしながら“もう一度食べたい”と思ってもらえる肉作りを目指しています。三重県といえば松阪牛や伊賀牛が有名ですが、うちは“名前”じゃなく“味”で勝負したいんです。『いなべ牛』を全国の人に知ってもらうために、地道に努力を続けています。」  


記者「いなべ牛の美味しさを引き出すために、特に難しいと感じる部分はありますか？」  

伊藤さん「やっぱり一番難しいのは“ビタミン管理”ですね。脂の質を良くするには、ビタミンのバランスがとても重要なんです。ビタミンが不足すると、牛の毛並みが悪くなったり、エサの食いつきが落ちたりします。ひどい場合は下痢をしたり、目や足が腫れたりすることもある。そうなると当然、肉の質も落ちる。だから毎日、牛の様子を細かく観察しながら、必要に応じてビタミンを補給しています。この管理が本当に難しくて、でもここを徹底することで、あの口溶けの良い脂ができるんです。」  


記者「いなべ牛を育てるうえで、他にも細かく気をつけていることはありますか？」  

伊藤さん「“瑕疵（かし）”と呼ばれる傷の管理が大事なんです。牛は群れの中で力関係を決めるために頭を突き合わせたり、押し合ったりします。そのときにできるアザや腫れが肉に影響するんです。うちでは牛の角が伸びてきたらカバーをつけたり、なるべく傷がつかないように工夫しています。メス牛は発情期になると、お互いに乗りかかったりするんですが、それでも肉にダメージが出るので、その管理も気をつけています。」  


記者「いなべ牛は皮下脂肪が薄いとのことですが、それによる影響はありますか？」  

伊藤さん「はい、うちの牛は脂の質を重視しているので、皮下脂肪が一般的な牛よりも薄いんです。だからちょっとした衝撃でもすぐに傷がついてしまう。普通なら問題にならない程度のぶつかりでも、うちの牛にとっては大きなダメージになることがある。だからこそ、毎日牛の状態をしっかり見て、どんな小さな異変も見逃さないようにしています。これは簡単なことじゃなくて、だからこそ挑戦しがいがある。うちの親父も職人気質で、この難しさにこだわり続けているんです。『美味しい脂のためならどれだけ手間がかかってもいい』っていう、その信念がうちのいなべ牛の美味しさにつながっているんだと思います。」

Reporter: "Please tell us about the particularities you take at your cowshed, Mr. Ito."

Ito: "We are farmers who raise Inabe beef in Inabe City, and in the whole country, only we and our neighboring Shimizu Livestock are raising Inabe beef. The distinctive feature of Inabe beef is the "quality of the fat," so we are extremely particular about the fat. After all, what determines the deliciousness of beef is the sweetness of the fat and how well it melts in your mouth. That's why we take consumer opinions seriously and aim to produce meat that makes people want to eat it again. Mie Prefecture is famous for Matsusaka beef and Iga beef, but we want to compete with the "taste" rather than the "name." We continue to make steady efforts to make "Inabe beef" known to people all over the country. "

Reporter: "Is there anything that you find particularly difficult in bringing out the flavor of Inabe beef?"

Ito: "After all, the most difficult thing is 'vitamin management.' Vitamin balance is very important to improve the quality of the fat. If there is a vitamin deficiency, the cow's coat will become rough and it will not eat as much. In severe cases, it may develop diarrhea or swollen eyes and feet. Naturally, this will lead to a decline in the quality of the meat. That's why we closely monitor the cows' condition every day and replenish them with vitamins as needed. This management is really difficult, but by being thorough, we can produce fat that melts in your mouth."

Reporter: "Are there any other details you pay attention to when raising Inabe beef?"

Ito: "It's important to manage the wounds, which are called 'defects.' Cows butt their heads and push each other to determine who is the strongest in the herd. The bruises and swelling that occur when this happens can affect the meat. We put covers on the horns of our cows when they start to grow, and we try to avoid injuries as much as possible. When female cows are in heat, they jump on each other, but even that can damage the meat, so we are careful to manage that as well."

Reporter: "I heard that Inabe beef has little subcutaneous fat. Does this affect the meat?"

Ito: Yes, we place importance on the quality of the fat, so our cows have thinner subcutaneous fat than other cows. That's why even a small impact can easily damage them. Even a bump that would not normally be a problem can cause great damage to our cows. That's why we check the condition of the cows carefully every day and make sure we don't miss even the smallest abnormality. This is not an easy task, but it's what makes it so challenging. My father is also a craftsman, and he continues to focus on this difficulty. I think that his belief that ``it doesn't matter how much effort it takes for the sake of delicious fat'' is what leads to the deliciousness of our Inabe beef.

終わらない挑戦

記者「伊藤さんの育てた牛に点数をつけるとしたら、何点ですか？」

伊藤さん「最終的に出荷する状態は100点だと思っています。そうでなければ、取り扱っていただく方に失礼になるからです。これはただの自己評価ではなく、実際にA4ランク以上の成績が90%以上というデータがあるためです。だからこそ、自信を持って『うちの牛は美味しい』と言えます。月の枝肉格付けが全頭BMS12番の方もよく見られます。」

記者「すでに100点という評価ですが、もし120点を目指すとしたら、どんな改善を考えていますか？」

伊藤さん「枝肉重量の増加を目指しています。例えば、導入する牛をもう少し大きめのものにするというのは一つの方法です。ただ、それよりも今の飼育方法に合った牛を選ぶことが大事なので、慎重に進めています。あとは、ビタミン管理をさらに徹底することです。脂の質を重視するあまり、ビタミンを与えすぎると肉質に影響してしまいますし、逆に増体を意識するとビタミン管理が甘くなってしまうため、バランスを取るのが非常に難しいです。より精密な管理方法を模索しながら、理想の肉質を追求していきたいと思います。」

記者「増体を改善するために、繁殖からの見直しも考えていますか？」

伊藤さん「はい。導入された牛は輸送によるストレスがかかるため、成長に悪影響を及ぼす可能性があります。そこで、うちでは自家産牛の飼育を推進しています。基本的には、子牛の面倒を親牛に任せる「親付け」という方法を採用しており、これにより免疫力が向上するとともに、親牛の行動を真似して餌の食べ方や水の飲み方が習得され、成長スピードが速くなると感じています。また、育成ロスやストレスが軽減されるため、管理面での改善にもつながると考えています。さらに、子牛の下痢などの管理を徹底することで、より質の高い牛の育成を目指しています。」


記者「今、一番役に立っているアイテムを教えてください。」  

伊藤さん「カメラと馬用の投薬器ですね。カメラは親父の時代にはなかったんですが、導入してから本当に多くの命を救えています。以前は朝昼晩の見回りだけが頼りで、その間に牛が倒れてしまうこともありました。でも今は、どこにいてもスマホで牛の様子を確認できます。お産の兆候があればすぐ駆けつけられるし、起立困難になっている牛もすぐに発見できます。カメラのおかげで助けられた牛は何頭もいます。」  


記者「なるほど。馬用の投薬器はどのように使われるんですか？」  

伊藤さん「これは、口からビタミンを投与するための道具です。以前は注射でビタミンを与えていましたが、牛が暴れて危険だったり、ストレスがかかったりする問題がありました。でも、この投薬器なら牛の口の横からすっと入れて簡単に投与できるので、安全で手軽に使えます。特にビタミン管理が重要なうちの飼育方法では、この道具がすごく役立っていますね。」

Reporter: "If you were to give a score to the cattle you raised, how many would you give them?"

Ito: "I think they'll be 100 points when they're ready to ship. This isn't just a self-evaluation, but data shows that over 90% of them are actually A4 rank or above. That's why I can confidently say that 'our cattle are delicious.' There are often times when all of our carcasses are rated 12 for the month."

Reporter: "You're already rated 100 points, but if you were to aim for 120 points, what kind of improvements are you considering?"

Ito: "For example, one way would be to introduce larger cattle. However, it's more important to select cattle that suit the current breeding method, so we're being careful about that. Another thing is to be more thorough with vitamin management. If you focus too much on the quality of the fat and give too many vitamins, it will affect the quality of the meat. Conversely, if you focus on weight gain, you'll be lax with vitamin management. It's really difficult to strike a balance here. I want to pursue the ideal meat quality while exploring ways to manage it more precisely."

Reporter: "Are you considering reconsidering breeding to improve weight gain?"

Ito: "That's right. The cows that are brought in are stressed during transportation, which inevitably affects their growth. So one solution is to increase the number of cows that are home-bred. We basically have our mothers raise the newborn calves. Thanks to that, we've seen fewer problems with diarrhea recently. I think that if we increase the proportion of our own calves, we can raise higher quality cows while reducing the effects of transportation stress."

Reporter: "What are the items that are most useful to you right now?"

Ito: "A camera and a horse medicine dispenser. Cameras didn't exist in my father's time, but since we got them, we've been able to save so many lives. Before, we only had to rely on morning, afternoon, and evening patrols, and sometimes the cows would collapse during that time. But now, we can check on the cows on our smartphones wherever we are. If we see signs of labor, we can rush to the scene, and we can quickly find cows that are having trouble standing up. Many cows have been saved thanks to the camera."

Reporter: "I see. How is the horse medicine dispenser used?"

Ito: "This is a tool for administering vitamins orally. In the past, we gave vitamins by injection, but this could cause problems, such as the cows getting violent and becoming stressed. But with this dosing device, you can simply insert it into the side of the cow's mouth and administer the vitamins, so it's safe and easy to use. This tool is extremely useful, especially for our breeding method, where vitamin management is important."

牛に生かされ、牛と生きる

記者「伊藤さんにとっての師匠や目標にしている方を教えてください。」  

伊藤さん「やっぱり親父ですね。牛を見る目、管理の技術、育て方のこだわり、どれを取っても一流です。うちは全国の品評会でも上位に入る牛を育てていますが、それは親父の積み上げた技術があってこそ。自分はまだまだですが、少しでもその背中に近づけるように頑張っています。」  


記者「お父様はどんな性格の方なんですか？」  

伊藤さん「とにかく多くを語らない。昔ながらの職人ですね。口で教えるんじゃなくて、背中を見て学べというタイプ。畜産を始めて3年経ちますが、ずっと親父のやり方を見ながら、わからないことがあれば自分で調べたり、聞いたりしながらやっています。最初は難しいと感じましたが、その分、身についた知識はしっかりとしたものになっていると思います。」  


記者「伊藤さんが牛飼いを始めたきっかけもお父さんですか？」  

伊藤さん「いや、もともとは違いました。14年間、製造業のサラリーマンをやっていたんです。でもコロナで仕事が減ったときに、時間ができたので家の手伝いをするようになりました。そこで初めて牛の奥深さや楽しさに気づいて、本格的にやってみようと思ったんです。親父のすごさを改めて実感したのもその頃ですね。それまではただ“牛を育てる仕事”だと思っていましたが、いざやってみると、肉質を決める脂の管理やビタミンの調整など、細かい部分の積み重ねが美味しさにつながることを知りました。」  


記者「お父さんとの関係はどんな感じですか？」  

伊藤さん「すごくいい関係だと思います。親父は職人肌ですが、頑固じゃなくて柔軟なんです。自分が新しい考えを提案すると、ちゃんと聞いてくれて、良いと思えば取り入れてくれる。だから衝突も少ないですね。昔ながらのやり方と、新しい技術の融合をしながら、より良い牛作りを目指しています。」  


記者「座右の銘を教えてください。」  

伊藤さん「“即実行”ですね。あのときやっておけばよかった、と後悔しないために、とにかく気づいたらすぐやることを心がけています。例えば、カメラを導入する前は、朝昼晩の見回りの合間に牛が倒れてしまうことがありました。『あとで見に行こう』と思ったせいで、手遅れになったこともあります。子牛の治療も同じです。『明日でいいか』と思っていたら症状が悪化したこともありました。だから今は、違和感を感じたらすぐに実行する。熱を測る、治療をする、すぐ対応する。そうすることで、助かる命が増えるんです。」  


記者「伊藤さんにとって、牛飼いとは？」  

伊藤さん「自分の中では“牛に生かされている”という気持ちが強いですね。牛を育てることで生活できているし、だからこそ牛を第一に考える。牛のためにできることは何か？を常に考えています。昔は事故も多かったですが、今はカメラの導入や管理の徹底で少しでも減らしていこうとしています。牛を無駄にしない、命を大切にする。それが自分の信念ですね。」

Reporter: "Who is your mentor or role model?"

Ito: "My father, of course. He has a keen eye for cattle, management skills, and a commitment to how they are raised. He is top-notch in every respect. We raise cattle that rank highly in national cattle competitions, but that is only possible thanks to the skills my father has built up. I still have a long way to go, but I am working hard to get closer to his example."

Reporter: "What kind of personality does your father have?"

Ito: "He doesn't say much at all. He's a traditional craftsman. He doesn't teach with words, but rather teaches by watching his example. It's been three years since I started raising livestock, and I've always watched my father's methods, and if there's something I don't understand, I research it myself or ask him. It was difficult at first, but I think the knowledge I've acquired has become solid."

Reporter: "Did your father also get you started raising cattle?"

Ito: "No, originally it wasn't like that. I was a salaried worker in the manufacturing industry for 14 years. But when work decreased due to COVID-19, I had more time and started helping out at home. That's when I first realized the depth and fun of cattle, and I decided to do it full-time. It was around that time that I once again realized how amazing my father was. Until then I thought it was just a job of "raising cattle," but when I actually did it, I learned that it's the accumulation of small details, such as managing the fat that determines the quality of the meat and adjusting the vitamins, that leads to deliciousness."

Reporter: "What is your relationship with your father like?"

Ito: "I think we have a very good relationship. My father is a craftsman, but he's not stubborn, he's flexible. When I propose a new idea, he listens carefully, and if he thinks it's good, he incorporates it. So we don't have many conflicts. We aim to raise better cattle by combining old-fashioned methods with new technology."

Reporter: "What is your motto?"

Ito: "Immediate action. I try to do something as soon as I notice it, so that I don't regret not doing it then. For example, before we introduced the cameras, cows would sometimes collapse in between morning, afternoon, and evening patrols. Sometimes it was too late because we thought, 'I'll check on them later.' It's the same with treating calves. Sometimes I thought, 'I'll do it tomorrow,' and their symptoms got worse. So now, if I feel something is wrong, I act immediately. Take the temperature, treat them, and respond immediately. By doing so, we can save more lives. "

Reporter: "What does being a cowherd mean to you, Mr. Ito?"

Ito: "I have a strong feeling that I am alive because of the cows. I make a living by raising cows, and that is why I put the cows first. I am always thinking about what I can do for the cows. There used to be a lot of accidents, but now we are trying to reduce them as much as possible by installing cameras and thorough management. Don't waste cows, cherish their lives. That is my belief."
