代々受け継ぐ畜産の極意

記者「上村さんの牧場では、一家相伝の技術や最近得た情報など、畜産に関する専門技術的なお話を伺えますか？」

上村さん「我が家では代々伝わる技術で、特に血統の良い牛の選び方や育て方には自信があります。祖父の時代から続くこの方法は、牛を健康的に大きく育てる秘訣を数多く含んでいます。最近では、牛の初期育成に関する新しい情報も取り入れており、濃厚飼料を使った育成法や出荷前の飼料調整、さらには牛の快適さを考慮した環境作りなど、日々進化する畜産技術を実践しています。」


記者「牛を太らせる技術について、具体的にどのような方法があるのでしょうか？」

上村さん「牛を理想的に太らせるためには、胃袋の容量を最大限に活用することが鍵となります。祖父から受け継いだ技術と、私が新しく学んだ知識を組み合わせて、牛の胃袋を丈夫にするために稲わらを使用しています。稲わらは消化にも良く、免疫力向上にも寄与し、結果的に300キロを超える健康な牛を育てることができます。この方法は昔から多くの成功例があり、現代でもその効果を実感しています。」


記者「牛を購入する際に、どのようなポイントを重視していますか？」

上村さん「牛を選ぶ際には、血統はもちろん、牛の形状、特に前方の張りや尻尾の付け根などを詳細にチェックします。祖父から学んだ視点で、牛を後ろから見たときの長方形のバランス、横から見たときのフォルムを重要視しています。これらのポイントは、牛の健康状態や将来の成長ポテンシャルを判断する上で非常に役立ちます。細部にまで目を配ることで、質の高い牛を見極めることが可能です。」

Reporter: "Could you tell us about the technical expertise of livestock farming at Uemura's farm, such as techniques passed down through the family or information you have recently acquired?"

Uemura: "We have techniques passed down from generation to generation in our family, and we are particularly confident in how to select and raise cows with good pedigrees. This method, which has been passed down since my grandfather's time, contains many secrets to growing healthy cows. Recently, we have also incorporated new information about early cow rearing, and we practice livestock farming techniques that are evolving every day, such as rearing methods using concentrated feed, adjusting feed before shipping, and creating an environment that takes into consideration the comfort of the cows."

Reporter: "Could you tell us more about the techniques for fattening cows? What methods are there to achieve this? ”

Uemura: “To fatten cows to an ideal size, the key is to make the most of the stomach capacity. Combining the techniques I inherited from my grandfather with the new knowledge I have acquired, I use rice straw to strengthen the stomachs of cows. Rice straw is easy to digest and helps improve immunity, resulting in healthy cows that weigh over 300 kg. This method has been used successfully in many cases since ancient times, and its effectiveness is still felt today.”

Reporter: “What do you pay attention to when purchasing cows?”

Uemura: “Cows” When selecting a cow, I check not only the pedigree but also the shape of the cow, especially the firmness of the front and the base of the tail. From a perspective I learned from my grandfather, I place importance on the balance of the cow's rectangle when viewed from behind and its shape when viewed from the side. These points are very useful in judging the cow's health and future growth potential. By paying attention to the details, it is possible to identify high-quality cows.

祖父から受け継ぐ知恵と新たな試み

記者「上村さんの牧場で育てられている牛の状態を点数で評価するとしたら、何点になりますか？」

上村さん「正直に言うと、私たちの牧場の牛の状態は50点ですね。主な理由としては、牛の密飼いから来るストレスです。密度が高いことで牛たちはストレスを抱えやすくなっており、それが最大の課題となっています。」


記者「50点という評価のプラスの面はありますか？」

上村さん「もちろん、プラスの面もあります。例えば、牛舎が狭いことで、事故が起きた際には迅速に対応できる点です。また、狭い空間により、餌の食いつきや管理がしやすく、一定期間内に出荷できる牛を効率的に育てることができます。このような管理のしやすさが、私たちの牧場の強みとなっています。」


記者「現在の状態からさらに改善するために、将来的にどのような計画がありますか？」

上村さん「今後は牛舎の改善に力を入れていきたいと考えています。具体的には、牛たちがより広い空間でストレスなく過ごせるように、新たな牛舎を借りる計画を進めています。これにより、牛たちの健康状態の向上や生産性の向上を期待しています。また、日差しや環境を改善することで、牛たちがより快適に過ごせるように取り組んでいます。」


記者「牧場で使用しているオススメのアイテムはありますか？」

Uemura: "To be honest, the condition of the cows on our farm is very good. The condition of the cows is 50 points. The main reason is the stress caused by overcrowding. The high density makes the cows more susceptible to stress, and that is the biggest issue.

Reporter: "Are there any positive aspects to a score of 50 points?"

Uemura: "Of course there are positive aspects. For example, the small barn allows for a quick response in the event of an accident. Also, the small space makes it easier for the cows to eat and manage, and we can efficiently raise cows that can be shipped within a certain period of time. This ease of management is the strength of our farm. "

Reporter: "What plans do you have for the future to further improve the current situation?"

Uemura: "We would like to focus on improving the cowshed in the future. Specifically, we are planning to rent a new cowshed so that the cows can live in a larger space without stress. We hope that this will improve the cows' health and productivity. We are also working to improve the sunlight and environment so that the cows can live more comfortably."

Reporter: "Are there any recommended items that you use at the ranch?"

Uemura: "Yes, at our ranch we use a lactic acid bacteria product called "Super Top." 上村さん「私たちの住む美里町は赤牛の名産地で、ここでは昔から美里牛と呼ばれるブランド牛を育てています。10年以上前、この地域の牛は県内の展示会などで高い評価を受け、その子牛たちも優れた肉質で出荷されるという良い循環がありました。しかし、高齢化の波により育てる人が減少し、美里牛ブランドも徐々に影を潜めていきました。」


記者「味や品質については、他の赤牛と比べてどうですか？」

上村さん「美里牛の肉質は、他の有名な赤牛と比較しても遜色ない品質です。美里町では主に草を食べて育つため、油が少なく、赤身が多い肉質になります。これはさっぱりとした味わいで、胃にもたれることが少ないため、多くの方に好まれます。」


記者「美里牛を育てることによって、上村さんが目指す未来像は何ですか？」

上村さん「私たちは美里牛を通じて、美里町の魅力を全国、そして世界に発信したいと考えています。SNSを活用してPR活動を行い、地元の伝統を守りつつ、新しいファンを獲得することが目標です。美里牛が再び名声を取り戻し、地元経済の活性化にも繋がることを願っています。」

上村さん「はい、私たち若い世代が地元を盛り上げ、美里牛を含む地元の特産品を全国に、そして世界に広めることができれば、地域全体が活性化します。地元への愛と誇りを持って、美里牛のブランド再興に向けて頑張ります。」

Uemura: "Misato Town, where we live, is famous for its red cattle, and here we have been raising a brand of cattle called Misato beef for a long time. More than 10 years ago, the cattle in this area were highly praised at exhibitions in the prefecture, and the calves were shipped with excellent meat quality, creating a good cycle. However, with the wave of aging, the number of people raising them decreased, and the Misato beef brand gradually faded away."

Reporter: "How does the taste and quality compare to other red cattle?"

Uemura: "The quality of Misato beef is comparable to other famous red cattle. In Misato Town, the cattle are raised mainly on grass. This results in less oil and more lean meat. This has a light taste and is not heavy on the stomach, so it is popular with many people.

Reporter: "What is your vision for the future, Mr. Uemura, by raising Misato beef?"

Uemura: "Through Misato beef, we want to spread the appeal of Misato town to the whole country and the world. Our goal is to use social media to promote the beef and gain new fans while preserving local traditions. We hope that Misato beef will regain its fame and lead to the revitalization of the local economy."
