山の静けさと水の恵み：土佐和牛の秘密

記者「式地さんの牧場でこだわっているポイントについて教えてください。」

式地さん「まず、私は繁殖農家なので、肥育農家さんに優れた牛を提供することが大切です。農家さんが喜ぶ牛作りを心がけており、基本的には高タンパクな飼料を中心に与えています。また、出荷間際には稲わらなどの粗飼料中心の給餌に移行しています。牛の健康を第一に考えて管理することにこだわっています。」


記者「粗飼料についてもう少し詳しく教えていただけますか？」

式地さん「稲わら以外にも高品質な牧草を与えています。チモシーなど、栄養価の高い牧草を常に餌箱に置いておくようにしています。削ろうと思えば削れる部分もあるのですが、最高の品質を提供するために惜しまず良いものを与えることで健康で強い牛を育てることができます。」


記者「他にもこだわっているポイントがあれば教えてください。」

式地さん「はい、毎日何度も牛の様子を見回っています。特に生後1ヶ月から3ヶ月までの子牛は、風邪や下痢が多発するため、特に注意を払っています。親牛の観察ももちろん大事ですが、子牛の健康状態を日々チェックしています。顔の表情、呼吸の速さ、毛並み、便の状態、鼻の湿り具合などを確認し、異変があればすぐに対処できるようにしています。」


記者「高知ならではの地理的な特徴について教えてください。」

式地さん「高知県は全国でも森林面積が一番多い県で、平地が少ないのが特徴です。山の中は静かで涼しいので、牛にとって非常に良い環境です。自然と共生しながら生きていくことで、牛も健やかに育っています。」


記者「高知の牛、特に土佐和牛は他の地域の牛と比べてどのような点が優れていますか？」

式地さん「高知の水質は非常に良く、例えば仁淀川や四万十川の水を飲んで育ちます。隣町には日本一の米を生産する場所もあり、質の良い水と環境で育つ牛は、穏やかで健康的です。また、山間部の静かな環境は牛にとってストレスが少なく、健康な牛が育ちやすいです。」

Reporter: "Please tell us about the points you are particular about at your ranch."

Shikiji: "First of all, I am a breeding farmer, so it is important to provide high-quality cattle to fattening farmers. I try to raise cattle that farmers will be happy with, so I basically feed them mainly high-protein feed. Also, just before shipping, I switch to feeding them mainly roughage such as rice straw. I am particular about managing the cattle with the health of the cattle in mind."


Reporter: "Can you tell me more about the roughage?"

Shikiji: "In addition to rice straw, we also feed them high-quality grass. I always try to keep nutritious grass such as timothy in the feed box. There are some parts that can be trimmed if we want to, but by generously giving good things to provide the best quality, we can raise healthy and strong cattle."


Reporter: "Please tell us if there are any other points you are particular about."

Shikiji: "Yes, I check on the cattle many times every day. Especially calves between one and three months old. In Kochi, we pay special attention because colds and diarrhea are common. Observing the mother cows is of course important, but we also check the health of the calves every day. We check their facial expressions, breathing speed, coat, stool condition, and nose wetness, so that we can deal with any abnormalities immediately. ”


Reporter: “Please tell us about the geographical characteristics unique to Kochi.”

Shikiji: “Kochi Prefecture has the largest forest area in the country, and is characterized by having little flat land. The mountains are quiet and cool, making it an excellent environment for cows. By living in symbiosis with nature, the cows also grow up healthy.”

Reporter: “In what ways are Kochi cows, especially Tosa Wagyu, superior to cows from other regions?”

Shikiji: “Kochi’s water quality is very good. For example, they grow up drinking water from the Niyodo River and Shimanto River. The neighboring town is also home to the number one rice producing area in Japan, and cows raised in this high-quality water and environment are calm and healthy. In addition, the quiet environment of the mountains makes it easier for cows to grow up healthy, as it is less stressful for them.”

トップセールスを支えるこだわりと努力

記者「自分の牛の状態に点数をつけるなら何点ですか？」

式地さん「本当は控えめに言おうかと思ったんですが、実際にやっている限り自信を持ってやるべきなので、80点くらいをつけたいです。」

記者「この80点の理由を教えていただけますか？」

式地さん「ありがたいことに年間のセリの半分以上、6割くらいは私の子牛がトップセールスをいただいています。平均で5万から10万ほど高く売らせてもらっていて、同じ農家さんに継続して買っていただけることが多いです。評価が悪ければ続かないでしょうから、一定の評価をいただけているのだと思います。ただ、裏切れないので、ケチらず良い飼料を与えることを心がけています。」


記者「牛の病気の管理も評価のポイントに入ると思いますが、その点についてはどうですか？」

式地さん「今はワクチンを利用して、子牛の下痢や肺炎を未然に防ぐようにしています。以前は自然に任せて発生したら治療する形でしたが、最近では下痢の5種混合ワクチンやTSV3などを利用して、病気を未然に防いでいます。これにより、健康で強い牛を育てられるようにしています。」


記者「80点を100点にするためにはどのような取り組みが必要だと思いますか？」

式地さん「毎年異常気象が発生しており、特に今年は電気代が昨年の1.5倍になりました。暑さが厳しいため、扇風機を回して対応しています。今後も柔軟に対応していく必要があります。例えば、雨が少ないとハエが増えるなど、突発的な事態に対処できるようにしたいです。こうした対応力を高めることで、100点に近づけていきたいと思います。」


記者「具体的にどのようなことを行っていますか？」

式地さん「異常気象や突発的な事態に柔軟に対応するための体制を整えることが重要です。例えば、子牛の健康管理を強化し、獣医師と連携して早期に対応することが必要です。また、母牛からの輸血なども取り入れ、迅速に対処することで病気の発生を減らしていきたいです。」

Reporter: "If you were to rate the condition of your cows, how many points would you give them?"

Shikiji: "I was actually thinking of being more modest, but as long as I'm actually doing it, I should be confident, so I'd like to give myself about 80 points."

Reporter: "Can you tell me why you're giving me 80 points?"

Shikiji: "Thankfully, my calves are the top sellers at more than half of the annual auctions, about 60% of the time. I sell them for about 50,000 to 100,000 yen more on average, and the same farmers often continue to buy from me. If the evaluation was bad, they wouldn't continue, so I think I have a certain level of evaluation. However, I can't let them down, so I try not to be stingy and give them good feed."


Reporter: "I think managing cow diseases is also a point of evaluation. What do you think about that?"

Shikiji: "Nowadays, we use vaccines to prevent diarrhea and pneumonia in calves. In the past, we would leave it to nature and treat it when it occurred, but recently, we have been getting 50% of diarrhea in calves. We use mixed-species vaccines and TSV3 to prevent diseases before they occur. This allows us to raise healthy and strong cows.


Reporter: "What do you think is necessary to improve our score from 80 to 100?"

Shikiji: "Every year, we experience abnormal weather, and this year in particular, our electricity bills were 1.5 times higher than last year. Because of the extreme heat, we use electric fans to deal with it. We need to continue to respond flexibly in the future. For example, we want to be able to deal with unexpected situations, such as an increase in flies when there is little rain. By improving our response capabilities in this way, we would like to get closer to 100 points."


Reporter: "What exactly are you doing?"

Shikiji: "It is important to have a system in place to respond flexibly to abnormal weather and unexpected situations. For example, we need to strengthen the health management of calves and work with veterinarians to respond early. We also want to reduce the occurrence of diseases by responding quickly, such as by incorporating blood transfusions from mother cows."

努力の積み重ねが支える一瞬の勝負

記者「師匠や目標にしている方を教えてください。」

式地さん「大学を卒業後、2年間国と町の研修制度を利用して、近隣の川井さん親子の牧場で研修させていただきました。今でも毎週のように他愛もない話をする仲です。川井さんは仕事が本当に趣味という方々です。地域の役員もされており、地域の顔であり農家の顔でもあります。県内でも有名な農家さんで、成績もトップクラスです。新しいことにどんどんチャレンジし、地域の資源を有効に活用しています。牛を飼っている人なら誰でも知っていて、目標にする存在ですね。」


記者「式地さんのお父様はどのような方でしょうか。」

式地さん「父は仕事するときは集中してやり、遊ぶときは遊ぶというスタイルです。だらだらせず、やるべきことを終わらせたらすぐに帰ります。飲むときは飲み、遊ぶときは遊ぶ、という感じです。自分もその性格を受け継いでいて、一人で黙々と仕事をしたいことが多いです。」


記者「川井さんとお父様は真逆のスタイルですが、どちらも目標にしているのですね。」

式地さん「そうですね。川井さんは県内で枝肉の競りで何度もチャンピオンを取っていて、繁殖牛も育てています。私の父も品評会で何度もチャンピオンになっていて、平均よりも高い評価を受けています。親の名に恥じない経営を目指しています。」

記者「最後に、座右の銘を教えてください。」

式地さん「座右の銘は『鍛錬は千日之行、勝負は一瞬之行』です。これは高校野球の監督が言っていた言葉で、私の経営に当てはめています。子牛を販売するまでの努力は長い時間かかりますが、競りは一瞬で決まります。その一瞬のために毎日の努力が大事だと感じています。」

Reporter: "Who is your mentor and who do you aspire to be?"

Shikiji: "After graduating from university, I spent two years training at the nearby Kawai family's ranch, using the national and town training system. We still chat about trivial things every week. Mr. Kawai really does enjoy his work. He is also a local official, and is the face of the community and the farmers. He is a famous farmer in the prefecture, and his results are among the best. He is constantly trying new things and making effective use of local resources. Anyone who keeps cattle knows him and looks up to him."

Reporter: "What is Shikiji's father like?"

Shikiji: "My father has a style of concentrating when he works and playing when he plays. He doesn't slack off, and goes home as soon as he's done what he needs to do. He drinks when he drinks, and plays when he plays. That's how it feels. I inherited that personality, and I often want to work alone in silence."


Reporter: "Mr. Kawai and your father have completely opposite styles, but you both have the same goal, don't you?"

Shikiji: "That's right. Mr. Kawai has won the championship at the auction of carcasses in the prefecture many times, and he also raises breeding cattle. My father has also won the championship at competitions many times, and has been evaluated higher than average. I aim to run a business that does not shame the name of my father."


Reporter: "Finally, please tell us your motto."

Shikiji: "My motto is 'Training lasts for a thousand days, but victory lasts for a moment.' This is a phrase that my high school baseball coach used to say, and I apply it to my business. It takes a long time to work hard to sell a calf, but the auction is decided in an instant. I feel that daily effort is important for that moment."
