純度100%オリーブオイルで育てる至高の肉質

記者「小川さんの牧場で特にこだわっているポイントについて教えてください。」

小川さん「うちの牧場では、牛の後半の仕上げ段階で純度100パーセントのオリーブオイルを与えて、脂質の良いお肉を作っています。このオリーブオイルは『キヨエオリーブオイル』といい、本当に混ざり気のない絞っただけの上質なオイルです。市販のものとは一線を画していて、ミシュランのシェフたちも使うほどの品質です。オーストラリアから取り寄せて、大阪で加工されたもので、健康にも良いと言われています。」

記者「このオリーブオイルの成分について詳しく教えてください。」

小川さん「本当に純度100パーセントのオリーブジュースのようなもので、混ざり気が一切ありません。上積みだけを絞ったもので、市販のものとは全く違います。健康に良いオレイン酸が非常に高く含まれていて、毎日食べても体に良いものです。」


記者「なぜこのオリーブオイルを使うことにしたのですか？」

小川さん「最初は遊び心から始めたんです。このオリーブオイルを紹介してもらったときに、オレイン酸が高いということを知って、試しに牛に与えてみたんです。すると、肉質に変化が現れました。脂質が良くなり、より美味しいお肉ができるようになったんです。」


記者「他にこだわっている点はありますか？」

小川さん「はい、やはりお肉の質にはこだわっています。私たちの牧場では、５等級の精肉歩留まりの良い肉質を目指して、餌にもこだわり、抗生物質を使用せず、健康的な牛作りをしています。さらに、私の弟が肉屋を経営しており、彼からのフィードバックを基に微調整を行い、常に品質の向上に努めています。」


記者「弟さんと連携しているとのことですが、どれくらいの期間一緒に仕事をされていますか？」

小川さん「もう14年目です。お客様からの厳しいフィードバックを元に、必要な調整を行い、常に最良の肉を提供することを目指しています。弟の店でのお客様の声を直に聞けることで、常にお客様のニーズに応えられるよう努力しています。」

Reporter: "Please tell us about the points that you are particularly particular about at your ranch."

Ogawa: "At our ranch, we feed 100% pure olive oil to the cattle in the finishing stage to produce meat with high fat content. This olive oil is called "Kiyoe Olive Oil" and is a high-quality oil that is truly pure and simply squeezed. It is different from commercially available oils and is of such high quality that even Michelin chefs use it. It is imported from Australia and processed in Osaka, and is said to be good for your health."

Reporter: "Please tell us more about the ingredients of this olive oil."

Ogawa: "It is really like 100% pure olive juice, with no impurities. It is just the top layer squeezed out, and is completely different from commercially available oils. It contains a very high amount of healthy oleic acid, so it is good for your body even if you eat it every day."


Reporter: "Why did you decide to use this olive oil?"

Ogawa: "It started out as a bit of fun. When I was introduced to this olive oil, I found out that it has a high oleic acid content, so I tried giving it to my cows. Then, the quality of the meat changed. The fat content improved, and the meat became more delicious. ”


Reporter: “Are there any other things you are particular about?”

Ogawa: “Yes, we are particular about the quality of the meat. At our farm, we aim for meat with a high meat yield of grade 5, so we are particular about the feed, do not use antibiotics, and raise healthy cows. In addition, my younger brother runs a butcher shop, and we make fine adjustments based on his feedback and always strive to improve the quality.”


Reporter: “I heard that you work together with your younger brother, but how long have you been working together?”

Ogawa: “It’s been 14 years already. We make the necessary adjustments based on strict feedback from customers, and always aim to provide the best meat. By being able to hear directly from customers at my brother’s store, we are always striving to meet the needs of our customers.”

世界が認めた和牛、95点からの挑戦

記者「小川さんの牛舎の牛に点数をつけるなら、何点ですか？」

小川さん「今の状態だと95点ですね。本当に牛の調子が良くて、枝肉成績が非常に優れています。枝肉重量も十分に取れて、中身も素晴らしい。加えて、食べても美味しいという三拍子が揃ったお肉が今の状態です。これが95点の理由です。」

記者「なるほど。では、その95点を100点に近づけるためにはどうしたら良いとお考えですか？」

小川さん「満足はしていますが、牛は生き物なので、100点はなかなか難しいと思います。1頭だけ見たら100点はあり得るかもしれませんが、全体的に見ると難しいです。ただ、常に改善を図り、96点に近づける努力は続けていきます。」


記者「95点という高得点を維持しつつ、さらに向上させるための具体的な取り組みについて教えてください。」

小川さん「はい、基本に忠実に、餌の質や管理の徹底を心掛けています。特に、餌の中に抗生物質を使用せず、自然な方法で健康的に育てることを重視しています。また、弟の肉屋からのフィードバックを大切にし、常に微調整を加えて品質を保っています。」


記者「最近、インスタグラムで世界大会で評価されたとありましたが、その大会について詳しく教えてください。」

小川さん「はい、『にっぽんの宝物』という食に関する大会で、全国大会の食品加工部門で準グランプリを取りました。その結果、世界大会に進出することができました。コロナで数年延期されましたが、昨年ついに開催され、私たちの和牛が評価されました。これを機に、キヨエオリーブオイルを使った育て方にさらに自信を持つことができました。」

Reporter: "If you were to give a score to the cows in Mr. Ogawa's barn, how many would you give them?"

Ogawa: "95 points right now. The cows are in really good condition, and the carcass quality is excellent. The carcass weight is sufficient, and the meat is also great. In addition, it's delicious to eat, so the meat has all three elements. That's why it's 95 points."

Reporter: "I see. So, what do you think we should do to bring that 95 points closer to 100 points?"

Ogawa: "I'm satisfied, but cows are living creatures, so I think it's difficult to get 100 points. If you looked at just one cow, it might be possible to get 100 points, but it's difficult to get 100 points overall. However, we will continue to make improvements and work to get closer to 96 points."


Reporter: "What are some specific efforts to maintain the high score of 95 points and improve it even further? Please tell us about it. ”

Ogawa: “Yes, I am faithful to the basics and am careful about the quality of the feed and thorough management. In particular, I do not use antibiotics in the feed and I place importance on raising the cattle in a healthy way in a natural way. I also value the feedback from my brother, who is a butcher, and always make fine adjustments to maintain the quality.”


Reporter: “Recently, you mentioned on Instagram that you were recognized at a world competition. Please tell us more about that competition.”

Ogawa: “Yes, we won the runner-up prize in the food processing category at the national competition of the food competition called ‘Treasures of Japan’. As a result, we were able to advance to the world competition. It was postponed for several years due to COVID, but it was finally held last year and our wagyu beef was recognized. This opportunity gave me even more confidence in the way we raise our cattle using Kiyoe olive oil.”

挑戦と妥協のバランス

記者「新規就農者の方へのメッセージをお願いします。」

小川さん「今の和牛業界は非常に厳しい状況にあります。特に若い人たちは、経験が少ないため、困難に直面すると気持ちが切れそうになるかもしれません。でも、良い時と悪い時を繰り返してきた先輩たちのように、我慢強く乗り越えることが大切です。そのためには、楽しみを持つことが重要です。例えば、毎日牛小屋に行くのが楽しくなるような牛を1頭でも導入することが、仕事を続ける上での励みになると思います。これは繁殖農家でも肥育農家でも同じです。」


記者「小川さん自身も大変な時期を経験されたことがありますか？」

小川さん「はい、口蹄疫やBSEの時期には、本当に辛い思いをしました。枝肉相場が暴落し、何度も『なぜこの仕事を選んだんだろう』と考えました。でも、そういった時期を乗り越えることで、今の自分があるんです。若い人たちには、辛い時期もあるけれど、必ず良い時期が来ると信じて続けてほしいですね。」


記者「若い人たちが成功するためのアドバイスをお願いします。」

小川さん「どんな仕事でも、面白さを見つけることが重要です。私は25年間和牛を育ててきましたが、常に学び続けることが大切だと思います。良い人に教えてもらい、悪いものは排除して良いものを取り入れる。その繰り返しで自分を高めてきました。若い人たちも、自分が尊敬する人を見つけ、その人から学び続けることで、必ず成功できると思います。よく私が従業員の子たちに言うのが、『流れを持っている人のところに行け』ということです。いい時もあれば悪い時もある中で、常に良い状態を維持している人は少ないです。その中で、今この人だと思う流れを持っている人に教えを乞うことが大事です。そうすることで、その人の運気も一緒にもらえるんです。」


記者「流れを持っている人とは具体的にどのように見分けるのですか？」

小川さん「やはり成績や実績を見ることです。牛で言えば枝肉の成績が安定しているとか、経営がしっかりしているとかですね。ただ高い牛を買うのではなく、自分が本当にいいと思う牛を選び、その人から学ぶことが大事です。そうすることで、自分の成績も自然と良くなっていきます。」


記者「確かに実績を見ることは大切ですね。他に若い人が成功するために必要なことはありますか？」

小川さん「図々しく聞きに行く勇気も大切です。断られたらそれまでの人ですが、懐の深い人は教えてくれます。自分も若い頃は色々な人に聞いて回り、経験を積んできました。ジュース一本持っていけば、何百万もの価値のある話を聞けることもあります。その経験を繰り返すことで、自分を高めていくことができます。」


記者「なるほど。流れを持っている人に学び、図々しく聞きに行く勇気が大切なんですね。」

小川さん「そうです。そして、その経験をもとに自分のやり方を確立していくことです。時代の流れや求められるものに合わせて柔軟に対応することが成功の鍵だと思います。」


記者「最後に座右の銘を教えてください。」

小川さん「自分の座右の銘は『〇を買え！』です。牛の名簿に〇をつけた牛を買うことで、結果的に良い成績を残せます。弱気になると、どうしても△の牛に手を出しがちですが、〇を買うことで牛舎に行く楽しみが増え、2年後の楽しみもできます。導入の時点で決まることが多いので、繁殖農家でも良い母牛を導入することが非常に重要です。妥協も時には必要ですが、勝負どころの牛を見極めて、値段が高くても自分の気に入った牛を買うことが大事です。例えば、70万円の牛が高く感じても、その牛が将来その価値以上に売れるなら、それは安い買い物です。気に入った牛を買うことが、良い成績に繋がるのです。」

Reporter: "Please give a message to new farmers."

Ogawa: "The current Wagyu industry is in a very tough situation. Young people, especially those with little experience, may feel discouraged when they face difficulties. However, it is important to persevere and overcome them, just like our seniors who have been through good and bad times. To do this, it is important to have fun. For example, I think that introducing even one cow that makes you enjoy going to the cowshed every day will encourage you to continue working. This is the same for breeding farmers and fattening farmers."


Reporter: "Have you ever experienced a difficult time yourself, Ogawa?"

Ogawa: "Yes, I had a really hard time during the foot-and-mouth disease and BSE outbreaks. The price of carcasses plummeted, and I often wondered, 'Why did I choose this job?' But overcoming those times is what made me who I am today. I hope that young people will continue to believe that even though there will be difficult times, good times will come."


Reporter: "Please give some advice to young people to help them succeed."

Ogawa: "It is important to find something interesting in any job. I have been raising Wagyu beef for 25 years, I think it's important to keep learning. Learn from good people, eliminate the bad and take in the good. I've improved myself by repeating this. I think young people can also succeed by finding someone they respect and continuing to learn from them. I often tell my employees, "Go to someone who has the flow." There are good times and bad times, and few people can always maintain a good state. In that case, it's important to ask someone who you think has the flow. By doing so, you can also get that person's luck.


Reporter: "How do you specifically tell if someone has the flow?"

Ogawa: "It's about looking at the results and track record. In the case of cattle, it would be stable carcass performance or solid management. It's important to choose cattle that you really think are good, rather than just buying expensive cattle, and learn from them. By doing so, your own results will naturally improve."


Reporter: "It's certainly important to look at the track record. Is there anything else young people need to succeed?"

Ogawa: "It's also important to have the courage to ask. If you are turned down, that's the end of it, but people with a deep heart will teach you. When I was young, I asked many people and gained experience. If you bring a bottle of juice, you can hear a million worth of stories. By repeating that experience, you can improve yourself. ”


Reporter: “I see. So it’s important to learn from people who have the flow and have the courage to ask them.”

Ogawa: “That’s right. Then, you can establish your own way of doing things based on that experience. I think the key to success is to be flexible and adapt to the trends of the times and what is required.”

Reporter: “Finally, please tell us your motto.”

Ogawa: “My motto is ‘Buy X!’ By buying cows with a X on the cow list, you can achieve good results. When I feel down, I tend to go for a △ cow, but by buying a X, I can enjoy going to the cowshed more and have fun two years later. Since it is often decided at the time of introduction, it is very important for breeding farmers to introduce good mother cows. Compromise is sometimes necessary, but it is important to identify the cows that are important and buy the cows you like even if they are expensive. For example, even if a cow that costs 700,000 yen seems expensive, if it sells for more than that value in the future, it is a cheap purchase. Buying cows you like leads to good results.”
