​記者「村田さんの牧場で特にこだわっている点を教えてください。」

村田さん「多分、ほかの農家さんと大きくは変わらないと思うんですが、特に稲わらの質にはこだわっていますね。うちでは米作りもしていて、その副産物として稲わらを確保するんですが、ただ収穫するだけじゃなく、天気を見極めながら最適な状態で乾燥させるようにしています。乾燥の度合いでビタミンの残り具合も変わりますし、牛の食いつきや健康にも影響が出るんです。天気予報をしっかりチェックして、いい藁が取れるように計画的に動くことを大事にしています。」


記者「自分たちで藁を作るのには、特別な理由があるのでしょうか？」

村田さん「そうですね、昔から米作りをしていたというのもありますし、牛を飼う以上、安定したエサの供給は欠かせませんからね。買うこともできますが、届いた藁が思った品質でなかったり、高いものを買ったのに牛の食いつきが悪かったりするリスクもあります。それなら、自分たちの目で見て育てて、しっかり乾燥具合も調整しながら管理したほうが安心です。牛が毎日食べるものだからこそ、妥協したくないですね。」


記者「藁の質が牛に与える影響は大きいんですね。ほかにも、牛の育て方でこだわっているポイントはありますか？」

村田さん「うちは一貫経営をしているのが大きな特徴です。特に、子牛の育て方にはこだわっていますね。繁殖農家さんだと、子牛を市場で高く売るために、ある程度仕上げた状態で出荷することが多いんですが、うちではそこを意識せず、じっくり成長させることを大事にしています。市場向けに見栄えを整えるよりも、しっかりとした体の基礎を作って、肥育段階に入ったときに本当に良い牛になるように育てる。長い目で見たときに、それが牛にとっても、最終的な肉質にとっても良い結果につながると思っています。」


記者「牛の健康や成長に影響を与える要素は多いと思いますが、ストレス管理の面ではどんな工夫をされていますか？」

村田さん「やはり、牛舎の環境は常に気をつけていますね。床の状態や餌の管理、水回りのチェックは欠かせません。特に冬場は、朝になるとウォーターカップの配管が凍ることもあるので、まずは水がちゃんと出るか確認することから一日が始まります。また、うちでは牛の角を切ることはしていません。角を切る農家さんもいますが、ストレスがかかる作業ですし、性格が穏やかな牛なら特に問題ないと考えています。実は、牛の角を見るとストレスの有無が分かることもあるんですよ。若いころに病気をした牛は角に節ができたりして、そういうのを見て健康状態を判断する方もいるくらいです。」


記者「ストレスといえば、物音や周囲の環境の変化も影響すると思いますが、その点はいかがでしょうか？」

村田さん「そうですね。実際に、うちの近くで大規模な道路工事があったときは、牛の成績が落ちたんです。騒音や振動の影響で、繁殖のタイミングがずれたり、生まれた子牛が思うように育たなかったりしました。でも、工事が終わって数年経った今は、だいぶ落ち着いてきましたね。牛は環境の変化に敏感ですから、静かで落ち着いた環境を作ることが大切です。逆に、牛舎で音楽を流す農家さんもいますが、あれは牛が嫌がらないならいいのかなと思います。昔、うちのじいちゃんは大音量で演歌を流していましたけどね（笑）。牛がリラックスできる環境を作るのが一番ですね。」

Reporter: "What do you pay particular attention to at your farm?"

Murata: "I think it's probably not that different from other farmers, but I do pay particular attention to the quality of the rice straw. We grow rice, and as a by-product we get rice straw, but we don't just harvest it. We watch the weather and try to dry it in the best conditions. The degree of dryness affects the amount of vitamins remaining, and it also affects the appetite and health of the cows. We check the weather forecast carefully and make sure to plan our actions so that we can get good quality straw."

Reporter "Is there a special reason why you make your own straw?"

Murata: "Well, we've been growing rice for a long time, and if you raise cattle, a stable supply of feed is essential. We could buy it, but there's the risk that the straw we receive won't be of the expected quality, or that the cattle won't eat it even though we bought expensive straw. In that case, it's safer to grow it ourselves, carefully adjusting the dryness and managing it. Since it's something the cattle eat every day, we don't want to compromise."

Reporter: "So the quality of the straw has a big impact on the cattle. In addition, Is there anything you pay particular attention to when raising cattle?"

Murata: "One of the biggest features of our company is that we run an integrated business. We are particularly particular about how we raise calves. Breeding farmers often ship calves in a more or less finished state in order to sell them at a high price on the market, but we don't focus on that and instead value letting the calves grow slowly. Rather than trying to make them look good for the market, we build a solid foundation for their bodies so that they will become really good cattle when they enter the fattening stage. In the long run, we believe that this will lead to good results for both the cattle and the final quality of the meat. I think so. ”

Reporter: “I think there are many factors that affect the health and growth of cows, but what kind of measures do you take to manage stress?”

Murata: “Of course, we always pay attention to the environment of the cowshed. It is essential to check the condition of the floor, the management of the feed, and the water facilities. Especially in winter, the pipes in the water cups can freeze in the morning, so we start each day by checking that the water is coming out properly. We also do not dehorn our cows. Some farmers do, but it is a stressful task, and we think that it is not a problem if the cows are calm. In fact, you can sometimes tell whether a cow is stressed or not by looking at its horns. Cows that were sick when they were young will have knots on their horns, and some people even look at these to judge their health. "

Reporter: "Speaking of stress, I think noise and changes in the surrounding environment also have an effect. What do you think about that?"

Murata: "That's right. In fact, when there was large-scale road construction near my house, the performance of the cows dropped. The noise and vibrations caused the timing of breeding to be off, and the calves that were born did not grow as expected. However, now that the construction has been completed and several years have passed, things have calmed down a lot. Cows are sensitive to changes in the environment, so it is important to create a quiet and calm environment. On the other hand, some farmers play music in the cowshed, but that dislikes the cows. I think it's fine if there isn't one. In the past, my grandpa used to play Enka music at full volume (laughs). The best thing is to create an environment where the cows can relax. "

牛のポテンシャルを引き出せ

記者「自分の牛の状態に点数をつけるとしたら、何点くらいだと思いますか？」

村田さん「繁殖から出荷までトータルで見て、85点くらいかなという気持ちですね。うちは一貫経営なので、特に繁殖母体には力を入れていますし、その部分では高い点数をつけたいと思っています。ただ、一貫経営の難しさとして、生まれてくる子牛を自分で選ぶことができないという点があります。例えば、購買で牛を選べる立場なら、自分の目利きで90点以上の牛を確実に仕入れることができます。でも、うちの場合は自分のところで生まれた牛を育てるので、どうしても多少のばらつきが出てしまう。生まれてくる子牛の素質によって仕上がりの個体差が出るのは避けられませんね。そういう部分も含めて、85点という評価になります。」


記者「生まれてくる子牛の個体差がある以上、100点にはなりにくいということですね。では、その85点の牛たちのポテンシャルは、どれくらい引き出せていると感じますか？」

村田さん「直近の何年かを振り返ると、90％くらいは引き出せているんじゃないかと思います。やっぱり、牛の持つ素質を最大限に活かすのが生産者の仕事。僕たちが無理に育てるというよりは、もともと持っているポテンシャルをどこまで引き出せるかが勝負なんです。飼育の実績を見ても、手応えはありますね。ただ、それでも生まれ持った部分は変えられない。だからこそ、85点の状態を維持し続けることが大事なんです。」


記者「では、その85点の牛たちを維持するためには何が大事ですか？」

村田さん「やっぱり血統の選び方は大事ですね。例えば、他県で優秀な種牛が生まれたと聞けば、その土地まで行って牛を買い付けることもあります。繁殖に向いた牛は価格も高くなりますが、そこはできるだけ妥協したくない。高いお金をかけてでも、いい牛を導入して、その血を自分の牧場で繋いでいく。そうやって積み重ねた結果が、今の85点に直結しているんだと思います。さらに、その血統を次の世代へと繋いでいくことで、より安定した品質の牛が育ってくる。これは、一貫経営だからこそできる強みですね。」

記者「血統を積み重ねていくことで、牧場全体のレベルを底上げしているんですね。では、牛の飼育に役立つおすすめのアイテムがあれば教えてください。」

村田さん「最近は動物用のバリカンを使っていますね。出荷前に牛の汚れを落とす作業があるんですが、昔は鉄ブラシみたいなものでゴシゴシこすっていたんです。でも、それだと牛の皮膚を傷つけてしまうこともあるし、場合によっては血が出てしまうこともある。バリカンなら短時間で終わるし、牛へのストレスも少なくて済む。あと、もうひとつはハエ対策の煙を焚くアイテムですね。特に夏場や梅雨時期はハエが大量発生するので、牛のストレスも大きい。刺しバエなんかは牛にとってもかなりの負担になるので、しっかり対策するようにしています。どちらのアイテムも、牛にとってできるだけ快適な環境を作るためのものですね。」

Reporter: "If you were to give a score to the condition of your cows, how many points would you give them?"

Murata: "Looking at the overall condition of our cows from breeding to shipping, I'd give them about 85 points. Since we are an integrated management, we put a lot of effort into our breeding mothers, and we would like to give them a high score in that area. However, one of the difficulties of an integrated management is that we cannot choose the calves that are born. For example, if you are in a position to choose the cows at the purchasing stage, you can be sure to purchase cows that score 90 points or higher based on your own judgment. However, in our case, we raise cows that were born on our own premises, so there is inevitably some variation. It is inevitable that there will be individual differences in the finished product depending on the calf's qualities. Taking that into account, we give them an 85 point rating.

Reporter: "So since there are individual differences in the calves that are born, it's difficult to get 100 points. So how much of the potential of those 85 point cows do you feel you are able to bring out?"

Murata: " Looking back over the past few years, I think we've been able to bring out about 90% of the potential. After all, it's the producer's job to make the most of the cow's natural qualities. Rather than forcing it, it's a matter of how much we can bring out the potential that the cow has. Looking at the breeding results, there is a sense of accomplishment. However, even so, you can't change what they were born with. That's why it's important to continue to maintain the 85-point condition.

Reporter: "So what is important to maintain those 85-point cows?"

Murata: "After all, choosing the bloodline is important. For example, if I hear that a good breeding bull has been born in another prefecture, I sometimes go to that area to buy the cow. Cows that are suitable for breeding are expensive, but I don't want to compromise on that as much as possible. Even if it costs a lot of money, I introduce good cows and pass on that bloodline to my own ranch. I think the results of doing so are directly linked to the current 85-point score. Furthermore, by passing on that bloodline to the next generation, cows of more stable quality are raised. This is a strength that can only be achieved through integrated management. "

Reporter: "By building up bloodlines, you're raising the overall level of the farm. So, please tell us if there are any items that you would recommend that are useful for raising cattle."

Murata: "Recently, I've been using animal clippers. Before shipping, we have to clean the cattle, but in the past, we used to scrub them with something like an iron brush. But that can damage the skin of the cattle, and in some cases, it can even cause them to bleed. With clippers, it only takes a short time and it's less stressful for the cattle. Another thing is a smoke device to keep flies away. Flies swarm in the summer and rainy season, especially, and it's very stressful for the cattle. Biting flies are a big burden for the cattle, so we try to take proper measures. Both items are meant to create as comfortable an environment as possible for the cattle."

生産者と消費者をつなぐ五感の哲学

記者「村田さんにとって、師匠や目標にしている方はいますか？」  

村田さん「やっぱり父ですね。仕事に対する取り組み方もそうですが、何より牛への愛情のかけ方を尊敬しています。うちのような肥育農家は、牛を高く売ることで生活を成り立たせています。でも、父はただ高く売ることだけを考えているわけじゃなくて、出荷したら必ず市場まで足を運んで、購買者と直接話をするんです。『今回の牛はどうだったか？』とか、『どこが良くて、どこが課題だったか？』っていうことを正直に伝えながら、お客さんとの関係を大事にしている。その姿勢をずっと見てきたので、僕も自然とそういう考えになりました。」  


記者「単に売るだけでなく、正直なフィードバックを大切にしているんですね。」  

村田さん「そうですね。お客さんもプロですから、こちらが無理に持ち上げたって意味がないんです。だから父は、良いところも悪いところも包み隠さず伝えます。例えば、『今日は思ったより仕上がりが良くなかった』と正直に言うことで、お客さんの信頼を得ることができるし、自分たちの牛飼いの改善点も見えてくる。そういう誠実な姿勢が大事だと思いますね。」  


記者「そういった姿勢は、長く良い関係を築く上でも重要なんでしょうね。では、村田さんの座右の銘を教えてください。」  

村田さん「『五感で牛を感じる』です。牛飼いとして、目で牛の様子を観察し、耳で環境の音を聞き、手で触れて状態を確かめる。そして、消費者としては、牛肉の味わいを舌で感じることも大切です。僕は一度、精肉店や食肉の卸売の仕事を経験してから実家に戻ってきました。だからこそ、牛を育てる側と食べる側、両方の視点を持っている。牛が生きている姿も、牛肉としての価値も、どちらも知っているからこそ、より良い牛を育てたいという思いが強いんです。牛の命を預かる者として、生産から消費までの流れを五感でしっかり感じながら向き合いたい。それが、この言葉に込めた思いですね。」

記者「生産者と消費者、どちらの気持ちも分かるからこそ、より良い牛を育てるための視点を持てるんですね。」  

村田さん「そうですね。牛飼いだけをやっていると、実際に食べている人がどんな顔をしているか分からない。でも、消費者の立場を経験したことで、どんな牛が求められているのかが分かるようになった。だからこそ、その両方をつなげる存在として、五感を研ぎ澄ませながら牛と向き合っていきたいですね。」

Reporter: "Murata, do you have a mentor or someone you look up to?"

Murata: "My father, of course. Not only the way he approaches his work, but above all, I respect the way he shows affection for his cattle. Fattening farmers like ours make a living by selling cattle at a high price. But my father doesn't just think about selling at a high price. After shipping the cattle, he always goes to the market and talks directly with the buyers. He values ​​relationships with customers, honestly telling them things like, 'How was the cattle this time?' and 'What was good and what were the issues?' I've always seen that attitude, so I naturally came to think the same way."

Reporter: "You don't just sell, you value honest feedback."

Murata: "That's right. The customers are professionals, so there's no point in us trying to push them too hard. That's why my father tells them both the good and the bad without hiding anything. For example, by being honest and saying, 'Today the results were not as good as I expected,' you can gain the trust of your customers and also see areas to improve in your cattle raising. I think that kind of honest attitude is important."

Reporter: "That kind of attitude must be important in building long-term, good relationships. So, what is your motto, Mr. Murata?"

Murata: "'Feeling the cows with all five senses.' As a cattle farmer, I observe the condition of the cows with my eyes, listen to the sounds of the environment with my ears, and touch them with my hands to check their condition. And as a consumer, it's also important to feel the taste of the beef with your tongue. I once worked at a butcher's shop and in meat wholesale before returning to my parents' home. That's why I have the perspective of both the person raising the cows and the person eating them. Because I know both how the cows look alive and their value as beef, I have a strong desire to raise better cows. As someone who is responsible for the lives of cows, I want to approach the process from production to consumption while fully feeling it with all five senses. That's the feeling I put into these words. "

Reporter: "Because you understand the feelings of both producers and consumers, you have a perspective on how to raise better cattle."

Murata: "That's right. If you only raise cattle, you don't know what the people who actually eat the cattle look like. But by experiencing the consumer's position, I've come to understand what kind of cattle are wanted. That's why I want to connect the two, and face the cattle while sharpening my five senses."
