熊本県菊池郡の「有限会社コーシン」。
自社ブランドである【香心ポーク】は、年間出荷頭数1万5千頭のうち、たった5％の豚しか名乗ることのできない。DNAからこだわった【香心ポーク】は栄養価が高く、脂身があっさりしており、関東や海外の有名飲食店と取引があるほど、最高品質のブランド豚として認知されている。
一般的な豚を大量生産した方が安定して利益が出る。それでも、”子どもたちに安心安全な豚肉を食べさせたい”、”大切な方へ最高に美味しい豚肉を自信を持ってお届けしたい”という想いから自社ブランドを立ち上げたと、取締役の熊野博嵩さんは語る。

Koshin Pork, which is made with special attention to its DNA, is highly nutritious and has a light fat content, and is recognized as a top-quality brand of pork, with deals with famous restaurants in the Kanto region and overseas.
Mass-producing regular pigs would generate more stable profits. But despite this, the company launched its own brand out of a desire to "feed children with safe and secure pork" and "deliver the most delicious pork with confidence to those important to us," says Director Kumano Hirotaka.

　
多くの親豚の中から優秀な親豚が選別され、香心ポークの候補となる子豚が生まれます。その中から特に発育状況が良好なメス豚のみを選び、専用の無農薬飼料で育てます。

選別の条件は様々ですが、一般的に父豚は生産性が高く、のびがいい豚が好まれます。しかし、香心ポークの父豚は肉質を重視しているため、足腰・ひづめがしっかりしており、丸っこい父豚を選びます。

年間１万５千頭を出荷していますが、香心ポークとして出荷できるのはたったの3％～5％のみ。優れたDNAを持ち、その中でも事故や病気に一度も合わなかった健康な豚だけが【香心ポーク】と名乗ることができるのです。

Outstanding pigs are selected from many sows, and piglets that are candidates for Koshin Pork are born. From these, only female pigs with particularly good growth conditions are selected and raised with special pesticide-free feed.

There are various selection criteria, but generally, pigs with high productivity and good growth are preferred. However, for Koshin Pork father pigs, emphasis is placed on meat quality, so pigs with strong legs and hooves and round shape are selected.

15,000 pigs are shipped annually, but only 3% to 5% can be shipped as Koshin Pork. Only healthy pigs with excellent DNA and who have never had an accident or illness can be called Koshin Pork.

一般的に豚はとうもろこしで育てます。とうもろこしはカロリーが高く太りやすいため、出荷日数が短くなり、生産性が高くなります。黄味がかったものが一般豚用の餌、茶色味がかったものが香心ポークの餌になります。

Generally, pigs are raised on corn. Corn is high in calories and easy to gain weight on, so the shipping period is shorter and productivity is higher. Yellowish corn is used for general pig feed, and brownish corn is used for Koshin Pork feed.

香心ポークのエサは、とうもろこしが入っておらず、太りにくい餌になります。しかし、とうもろこしを食べさせないことで脂が重くなく、あっさりしています。また、動物性飼料を一切使わないベジタブル無添加飼料のおかげで圧倒的に風味がよくなりました。

香心ポークの場合は、冷めて脂が固まってもサラっとしています。実際に、お客様やお取り扱いいただく飲食店からは「香心ポークは”赤身と脂肪”というより”赤身と白身”のような味わいだ」「脂身に塩をかけて食べられて美味しい」という声を頂いています。

さらに、鉄・マグネシウム等を豊富に含む阿蘇の天然ミネラルを含む黄土をエサに混ぜていることで、一般豚と比較して鉄分が４倍、マグネシウムが1.5倍多く含まれています。ミネラルを多く摂取しているので赤身がしっかりしており、血流もよくなることで豚のハリや色がとてもよくなります。

また、農場が阿蘇山の麓に位置することも強みで、飲水は阿蘇白川の天然水を使用しています。やっぱり水が美味しいと生き物は美味しくなりますね。

The feed for Koshin Pork does not contain corn, so it is not likely to make the pigs fat. However, by not feeding them corn, the fat is not heavy and is light. In addition, the flavor is overwhelmingly improved thanks to the vegetable-based additive-free feed that does not use any animal feed.

In the case of Koshin Pork, it remains light even when it cools and the fat solidifies. In fact, customers and restaurants that handle the pork have said, "Koshin Pork tastes more like "red meat and white meat" than "red meat and fat," and "It's delicious to eat the fat with salt."

In addition, by mixing the feed with yellow soil containing Aso's natural minerals, which are rich in iron and magnesium, the pigs contain four times more iron and 1.5 times more magnesium than regular pigs. Because they consume a lot of minerals, the red meat is firm, and the improved blood flow gives the pigs great firmness and color.

Another advantage is that the farm is located at the foot of Mount Aso, and they use natural water from Aso Shirakawa for drinking water. After all, if the water tastes good, the animals taste better.

​飼育環境については、交配舎・分娩舎・離乳舎・肥育舎などの豚舎ごと、さらには豚の状態ごとに温度や湿度、明るさを設定しています。分娩舎では、同じ柵の中でも子豚は床暖房やハロゲンヒータで温め、母豚は冷やすために風を直接あたるようにファン等を設置しています。

豚舎ごとに適した温度・湿度もデータ管理をしており、10分おきに更新される数値を24時間いつでもスマートフォンで確認することができます。

しかし、データ管理はあくまでも基本情報として設備導入をしていますが、一番は人の目が大切です。例えば、人が来た時に豚が立つかどうか、お腹の大きさを見てエサを食べているかどうか、呼吸を見て病気になっていないか、足が悪くないか等、毎日豚を見て変化がないか確認をしています。

As for the breeding environment, the temperature, humidity, and brightness are set for each pigpen, such as the breeding house, farrowing house, weaning house, and fattening house, and even for each pig's condition. In the farrowing house, even if they are in the same pen, the piglets are warmed with floor heating or halogen heaters, and fans are installed so that the sows are directly exposed to the wind to cool them down.

The temperature and humidity appropriate for each pigpen are also managed by data, and the values ​​updated every 10 minutes can be checked 24 hours a day on your smartphone.

However, while the equipment is introduced for data management only as basic information, the most important thing is the human eye. For example, when people come, we check whether the pigs stand up when people come, check the size of their stomachs to see if they are eating, check their breathing to see if they are sick or have any problems with their legs, and check for any changes every day.

​そして、豚舎の衛生管理をしっかり行い、クリーンな環境で育てるのはもちろんのこと、飼育過程でのストレスをできる限り少なくするため、同じ親豚から生まれた豚のみの環境で育てます。
これにより、同じ親を持つ豚以外との接触がなく、兄弟のみで育てるため、ストレスが軽減され、良質な肉質の豚が育ちます。

また、豚には様々な病気のリスクがあるため、通常は抗生物質を摂取させます。しかし、私たちが出荷している一般豚は、コープ九州産直認定農場の規定に沿っているため、一般的に流通している豚肉の半量の抗生物質で出荷しています。さらに、香心ポークは抗生物質を一切使用していません。そのため、防疫面では細心の注意を払っています。

And, in addition to carefully managing the hygiene of the pigpen and raising them in a clean environment, we raise them in an environment where only pigs born from the same mother pig are raised in order to reduce stress as much as possible during the breeding process.
This reduces stress and produces pigs with high-quality meat because they are raised with only siblings and have no contact with pigs of the same parent.

Also, pigs are usually given antibiotics because they are at risk of various diseases. However, the general pigs we ship are shipped with half the amount of antibiotics as pork that is generally distributed, in accordance with the regulations of the Coop Kyushu Direct Farm Certified Farm. Furthermore, Koshin Pork does not use any antibiotics. Therefore, we pay close attention to disease prevention.

世界文化遺産「天草の崎津集落」の隣町、天草市大江の『合同会社ピッグス』。代表を務める井戸栄造さんは18年前にサラリーマンを辞めて父が行っていた養豚業を継ぐために天草に帰ってきた。創業当初は子豚2頭から生産を始め、時代の流れと共に養豚経営の社会的信頼の確立及び社会貢献を加速するために法人化を行った。近年では、井戸さんが代表となり、地元の養豚業を営む仲間とグループを作り、大江地区の環境保全にも力を入れている。

Pigs LLC is located in Oe, Amakusa City, a town next to the World Heritage Site "Amakusa's Sakitsu Village." Representative Ido Eizo quit his job as an office worker and returned to Amakusa 18 years ago to take over his father's pig farming business. When the company was first established, they started producing just two piglets, and as times changed, they incorporated the company to build social trust in pig farming and accelerate their contribution to society. In recent years, Ido has become representative and formed a group with fellow local pig farmers, focusing on environmental conservation in the Oe area.

​人には得意分野があるけど、私は豚を飼うことが得意ではないです。だから豚にこだわりはないし、良い豚を作ろうということには興味がありません。だけど商売をしている以上、1頭の豚をどう安く育てて、どれだけ高く売るかは考えています。

​豚を飼うことはオリンピックではないので、金メダルを獲ってもお金にはなりません。だから豚を飼うことに一生懸命になってもしょうがないと思うようになりました。よく成績が重要視されますよね。田んぼでいうと反収とか、鶏でいうと飼料要求率とか、豚でいうと一母豚あたりの出荷頭数とか…私は全く興味がありません（笑）。もちろん私も若い頃は成績を気にしていたし、成績が上がれば儲かると思って頑張っていました。成績は数字で見ることができるので安心材料になります。しかし、成績が悪くても儲かっているところもあれば、成績が良くても儲かってないところもあるんです。いかにコストを抑えて、最大の利益を生み出すか。交渉力は超得意分野なので(笑)。前職での営業経験が活きているかもしれません。

​Everyone has their specialty, but I'm not good at raising pigs. So I don't have any particular preference for pigs, and I'm not interested in raising good pigs. But since I'm in business, I think about how to raise each pig cheaply and sell it for as much as possible.

​Raising pigs is not the Olympics, so even if you win a gold medal, you won't make money. So I've come to think that there's no point in working hard at raising pigs. Performance is often emphasized. For rice fields, it's the yield per hectare, for chickens, the feed conversion rate, for pigs, the number of pigs shipped per sow... I'm not interested at all (laughs). Of course, when I was young, I also cared about performance, and I worked hard thinking that I would make money if my performance improved. Performance can be seen in numbers, so it's reassuring. However, there are places that are profitable even if their performance is poor, and there are places that are not profitable even if their performance is good. How to reduce costs and generate maximum profits. Negotiation skills are my specialty (laughs). My sales experience in my previous job may be coming in handy.

私は毎朝、一人焼肉をします（笑）。7時には家を出るから6時半に朝食。時間がある日は味噌汁を出汁から作ります。特に意味はなく、食べたいから食べているんですけどね。

仕事は終わっていなくても16時半に切り上げて、誰よりも早く帰ります。もちろん従業員もですが、自分が一番に帰るようにしています。そして17時からお酒を飲む。これが日々の活力となっています。自分がだめになったら農場がやっていけないから、自分の体に力を入れるようにしています。

I have yakiniku by myself every morning (laughs). I leave the house at 7, so I have breakfast at 6:30. On days when I have time, I make miso soup from scratch. There's nothing particularly meaningful about it, I just eat it because I feel like it.

Even if I'm not done with work, I finish at 4:30 and go home earlier than anyone else. Of course, my employees do too, but I try to be the first to go home. Then I start drinking from 5:00. This is what gives me energy every day. If I wasn't in good shape, the farm wouldn't be able to run, so I try to keep my body in shape.

養豚業を始めたきっかけは父が癌になったことです。熊本市内の一般企業に就職し、営業マンを10年くらいしたころでした。父が癌だとわかって「帰ってきてくれ」と言われたことがきっかけです。もともと就農するつもりはなくて、ちょうどサラリーマンにも飽き始めていたタイミングでした。就農して1年後に父が死んで、もうやるしかないと思いました。

どんな商売も同じですが、資金繰りのプレッシャーは半端なかったです。30代で最大2億の借金、銀行からも税理士さんからも心配されました（笑）。でも30代だったから全く怖くなかったし、あきらめようと思ったこともありません。あきらめても借金しか残らないので、とにかくがむしゃらでした。

会社を経営するにあたって、必要がないと思ったことはすぐに辞めます。逆に必要だと思ったことは続けます。その決断は早いかもしれません。

The reason I started pig farming was because my father had cancer. I had been employed at a general company in Kumamoto City and had been working as a salesman for about 10 years. When I found out my father had cancer, he asked me to come back. I had no intention of going into farming, and I was just starting to get tired of being an office worker. A year after I started farming, my father died, and I thought I had no choice but to do it.

As with any business, the pressure of managing finances was immense. I was in my 30s and had a maximum debt of 200 million yen, and both the bank and the tax accountant were worried about me (laughs). But I was in my 30s, so I wasn't scared at all, and I never thought about giving up. Even if I gave up, all I would be left with was debt, so I was just desperate.

When running a company, I immediately quit anything that I don't think is necessary. On the other hand, I continue anything that I think is necessary. That decision may be quick.
