①飼料と環境を整える

ー早速ですが、どのような飼料を使われていますか？
　特徴としては、安全な非遺伝子組み換え（Non-GMO）飼料を使用しています。主な飼料である「米」は、オレイン酸を増やす作用があり、調理中に出るアクを減少させます。アクが多いと臭みが出て料理の味に大きく影響しますよね。しかし、米を飼料として使うには一つ問題がありました。実は、豚は米を吸収することができないんです。

ーそうなんですか！？どうされたのでしょうか？
　米を熱処理することで吸収率を上げました。熱処理のおかげで吸収率はほぼ100％になります。だからといって、たくさん食べさせたら良いというわけでもなく、米の割合が多すぎると肉色が薄くなってしまいます。もちろん見た目は重要で、買うときはきれいなピンク色を選びたくなりますよね。ちなみに、肉色が濃い場合は動物性たんぱく質の影響が考えられます。

ー動物性たんぱく質….. どういったものがあるのでしょうか？
　やはり成長させるためには動物性たんぱく質が必要で、飼料中には魚粉が入っています。臭みが出てしまうので使っていない養豚場も多いのですが、白身魚だと臭みがなく、肉質に良い影響を与えます。

ー飼料以外に気を使っていらっしゃることはありますか？
　豚舎は常に綺麗に、豚が過ごしやすい環境をつくっています。例えば、温度管理として簡易パド（冷風扇）を使用し、内気は外へ、外気は水を通して中へ入れるようにしています。そのおかげで、豚舎内はある一定の温度を保つことができます。夏場は外にいるより豚舎内の方が涼しく、豚の食欲が落ちることはありません。

-First of all, what kind of feed do you use?

One feature is that we use safe non-genetically modified (Non-GMO) feed. The main feed, rice, has the effect of increasing oleic acid and reducing the scum that comes out during cooking. If there is a lot of scum, it gives off an unpleasant odor and greatly affects the taste of the food. However, there is one problem with using rice as feed. In fact, pigs cannot absorb rice.


-Really?! What did you do?

We increased the absorption rate by heat-treating the rice. Thanks to the heat treatment, the absorption rate is almost 100%. However, that doesn't mean that it's good to feed them a lot of rice, as the meat color will become pale if there is too much rice. Of course, appearance is important, and when you buy it, you want to choose a beautiful pink color. By the way, if the meat color is dark, it may be due to the influence of animal protein.


-Animal protein... What kind of protein is there?

After all, animal protein is necessary for growth, and fish meal is included in the feed. Many pig farms do not use white fish because it gives off an unpleasant odor, but white fish does not have an unpleasant odor and has a positive effect on the quality of the meat.


-Anything else you pay attention to besides feed?

The pigpen is always kept clean and the environment is comfortable for the pigs. For example, we use a simple pad (cooling fan) to control the temperature, and the inside air is blown out and the outside air is passed through water to let in. Thanks to this, we can maintain a certain temperature inside the pigpen. In summer, it is cooler inside the pigpen than outside, so the pigs' appetite does not decrease.

②気づきを伝える

ー井上さんのルーティンを教えてください！
　朝は必ず2時間かけて農場内の見回りを行い、併せて分娩舎の餌やりをします。農場内を1周すると約3㎞程になります。小学生の頃から豚に餌をやってから学校へ行くのが習慣でした。学校から帰ってきても豚舎や直行してましたね。餌やりや糞取りが本当に楽しみだったんです。もちろん夕方も朝同様に見回りをして帰るようにしています。

ー2時間ですか！？どのようなことを意識されているのでしょうか？
　豚の様子や豚舎内の環境を観察するのはもちろんですが、気づいたことは必ず従業員に伝えるようにしています。それを毎日繰り返すことで、従業員も予測がつくようになります。単なる作業ではなく、応用が利くようなると言うんですかね。安心して任せられる従業員がたくさんいます。

-Please tell us about Mr. Inoue's routine!

In the morning, I always spend two hours patrolling the farm and also feeding the farrowing house. One lap around the farm is about three kilometers. Since I was in elementary school, it was my habit to feed the pigs before going to school. Even when I came home from school, I would go straight to the pigpen. I really looked forward to feeding them and picking up their feces. Of course, I make sure to patrol the farm in the evening as well as in the morning before going home.


-Two hours?! What do you pay attention to?

Of course, I observe the pigs and the environment in the pigpen, but I always tell my employees about anything I notice. By doing this every day, the employees become able to predict what will happen. It's not just a simple task, but something that can be applied. I have many employees who I can trust.

③糸島の養豚を守る

ー今後の展望を教えてください！
　42年前に現在の場所に農場を移転しました。現在、糸島市には養豚農家が7件あります。また、うちの農場には14名の従業員います。これらを守ることが私の役割だと思います。彼らを幸せにするために頑張っていきます。

We moved the farm to its current location 42 years ago. Currently, there are seven pig farms in Itoshima City. We also have 14 employees on our farm. I think it is my role to protect these things. I will do my best to make them happy.
